
Creamy Chicken Curry with Golden Spices
Ingredients:
- 3 tablespoons olive oil
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 3 tablespoons Golden Spices Curry Powder
- 1 teaspoon Golden Spices Cinnamon Powder
- 1 teaspoon Golden Spices Paprika
- 1 Golden Spices bay leaf
- ½ teaspoon freshly grated ginger root
- ½ teaspoon white sugar
- Salt, to taste
- 2 skinless, boneless chicken breast halves, diced into bite-sized chunks
- 1 tablespoon tomato paste
- 1 cup plain yogurt
- ¾ cup coconut milk
- Juice of ½ lemon
- ½ teaspoon Golden Spices Cayenne Pepper
Instructions:
- Warm the olive oil in a skillet over medium heat. Add the chopped onion and cook until golden and tender.
- Mix in the garlic, Golden Spices Curry Powder, Golden Spices Cinnamon Powder, Golden Spices Paprika, bay leaf, ginger, sugar, and salt. Stir constantly for about 2 minutes to toast the spices and release their aroma.
- Add the chicken pieces, tomato paste, yogurt, and coconut milk. Stir to combine, then bring the mixture to a gentle boil. Lower the heat and allow it to simmer for 20 to 25 minutes.
- Take out the bay leaf and mix in the lemon juice and Golden Spices Cayenne Pepper. Let it simmer for another 5 minutes.
