Creamy Chicken Curry with Golden Spices

Ingredients:

  • 3 tablespoons olive oil
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 3 tablespoons Golden Spices Curry Powder
  • 1 teaspoon Golden Spices Cinnamon Powder
  • 1 teaspoon Golden Spices Paprika
  • 1 Golden Spices bay leaf
  • ½ teaspoon freshly grated ginger root
  • ½ teaspoon white sugar
  • Salt, to taste
  • 2 skinless, boneless chicken breast halves, diced into bite-sized chunks
  • 1 tablespoon tomato paste
  • 1 cup plain yogurt
  • ¾ cup coconut milk
  • Juice of ½ lemon
  • ½ teaspoon Golden Spices Cayenne Pepper

Instructions:

  1. Warm the olive oil in a skillet over medium heat. Add the chopped onion and cook until golden and tender.

  2. Mix in the garlic, Golden Spices Curry Powder, Golden Spices Cinnamon Powder, Golden Spices Paprika, bay leaf, ginger, sugar, and salt. Stir constantly for about 2 minutes to toast the spices and release their aroma.

  3. Add the chicken pieces, tomato paste, yogurt, and coconut milk. Stir to combine, then bring the mixture to a gentle boil. Lower the heat and allow it to simmer for 20 to 25 minutes.

  4. Take out the bay leaf and mix in the lemon juice and Golden Spices Cayenne Pepper. Let it simmer for another 5 minutes.
